Jacques Selosse "Substance" (Disgorged Jul. 9, 2018)
Jacques Selosse was founded in the 1950s and is run today by Anselme Selosse. Anselme has created some of the most exciting wines in Champagne, focusing on the idea of terroir, a product of his time training in Burgundy, rather than high yields. His vineyards are all farmed biodynamically and the wines are fermented in oak barrels rather than more modern stainless steel tanks.
The Substance is made from a solera-system (like in Sherry in Spain) using exclusively Avize Grand Cru Chardonnay. The solera was started in 1987 and each release is more complex than the last given the additional vintage added to the system.
