Gaja "Sugarille" Pieve Santa Restituta Brunello di Montalcino 2013
From the famous Gaja family in Piedmont, where they make some of the best Barbaresco, Pieve Santa Restituta is their estate in the Brunello di Montalcino appellation in Tuscany.
Focusing here on 100% Sangiovese from the single vineyard site of Sugarille. This wine is full bodied with dark cherry tones, savory herbs, and well-integrated tannins.
At Alinea it was paired with a take on the classic Steak Diane. 7x Ranch 21-day wet aged ribeye with Vol au Vent of spinach, button mushrooms, and onions. Of course also with Sauce Diane made with mushrooms, Cognac, and Dijon mustard. The tannic structure of the wine is a time-tested match with ribeye, while the more savory flavors of the wine play off the mushrooms on the dish.
