Domaine Laroche "Vaillons Vielles Vignes" Chablis 1er Cru 2018
Domaine Laroche has over 1000 years of history, having been founded in 867 by monks. The first mention of wine production from the site dates back to 1128.
This particular bottling of 100% Chardonnay comes from the Les Vaillons Premier Cru vineyard, from some of the oldest vines of that site. Situated on the western side of the Serein river, it has a southeastern aspect and the classic Kimmeridgian limestone soils that give Chablis its brilliant minerality and crispness.
Paired at Alinea in Residence during the summer of 2020 with grilled filets of ayu (a Japanese sweetfish), yuzu butter, nasturtium, wasabi, and shiso. Having a green, herbal tone, the wine matches well with the nasturtium and shiso, while the bright citrus flavors match with the yuzu. And because this wine, like many Premier Cru Chablis, doesn’t see new oak, it doesn’t overpower the fish itself.
